METHOD
Westartbypeelingandcuttingcarrotintothinslices.Thenweputitintothehotoilinapot.
Nextwecutanonionandgarliccloves.Weaddthemtothecarrot.Sprinklewithsaltand
pepper.
Whentheonionistranslucent,poursugarandcinnamonintothepot.Wealsoaddcoconut
yoghurt.
Weputwaterinthekettletoboil.
Meanwhile,cutatomatointosmallerpiecesandputitinthepotwithcurryspice.
Nowwe'redealingwithtofu.Wecutthemintosmall,flatpiecesandmixtheminabowlwith
sixtablespoonsofoil,driedthyme,basil,garlic,soysauce,saltandpepper.Puttheminapan,
heatthemupandfrythemuntilgoldonbothsides.
Blendthecontentsofthepotandseasonwithsaltandpepper.
Put2heapedtablespoonsofsauceintoatallvessel,addcouscousandpourboilingwaterover
it,mix.Coverthetopwithaplateandwaitforthegroatstobeabsorbedliquid(about5
minutes).
Puttheswollengroatsintotherestofthesauce,mixthemandputonaplate.
Currycouscousservesprinkledwithcrispytofuandfreshparsley.
