beforeStarbucks.”1Thisisbecausehecreatedthefirstchainofrestaurantsand
hotelsintheU.S.,forwhichhesethighqualitystandards.FredHarveywasaculi-
naryvisionaryandamissionarywhospreadtheeatingcultureandgoodhygiene
inplaceswherebarrackswithdisgustingfoodwerereferredtoasrestaurants,and
wherecottageswithstrawmattressesonthefloorwereconsideredhotels.
TheAmericanWestoweshimnotonlythesuperbcuisine,butalsowives.Itwas
thelegendaryHarvey’sGirlsthatcametoworkthereandsettledintheareawho
contributedtothecivilizationalgrowthinthese“wild”lands.
FrederickHenryHarveywasbornonJune27,1835,inLondon.Hisfather,Charles,
ranatailorworkshop,whilehismother,Anne,tendedtotheirhouseholdandthree
children(asonandtwoyoungerdaughtersElizaandAnnie).Unfortunately,in1843,
thefamilybusinesswentbankrupt,andtheHarveysmovedintoarentedapartment,
firstonGreatMaryleboneStreet,andlaterat
16thLisleStreetinSoho.Inhisschoolyears,
youngFredstayedoverhiswealthyaunt
Mary’sonTottenhamHighStreet.
Attheageofseventeen,Freddecidedto
leavethecountry;inthespringof1853,he
sailedofftoNewYorktoseeknewpossibil-
itiesinAmerica.Hetoldhisacquaintances
thatheleftbecausehewantedtoavoidgetting
draftedandbeingpulledintotheconflicts
foughtbyGreatBritaininBurmaandCrimea.
InNewYork,hefoundajobasadishwasher
attheSmith&McNell’srestaurantforeight
dollarsamonth.Overtime,heperfectedhis
skillsservingalsoasabusboy,awaiterand
acook.Hetoiledandearnedabetterpay
FredHarvey,1835–1901
witheverynewjob.Helearnedhowtodo
